Project
#1935-41420-006 Objectives: The overall objective of the project is to develop new and/or improved methods for eliminating human pathogens from fruits and vegetables, especially sprouting seed and various types of sprouts, melons, and produce with easily damageable surfaces. Research will primarily focus on developing procedures for produce produced regionally. New intervention technologies are to be practical and cost effective. Specific objectives are 1) identify new, more effective chemical treatments to eliminate bacterial human pathogens from sprouting seed and fresh-cut produce, 2) determine the effectiveness of alternative intervention technologies including competitive exclusion and physical treatments, and 3) identify endogenous and exogenous factors which affect the survival, growth and interaction of resident microflora including spoilage bacteria and human pathogens. As new technologies for decontaminating produce are devised they will be patented (if appropriate) and the technology transferred to the produce production, packing and processing industries.
